I never really enjoyed the taste nor the smell of eggs in an omelette being singed in a pan. So I started making scrambled omelettes early on. Which is not to say that I don’t like crepes, because I do. Odd. Different pan.
Anyhow, I decided to show everyone my way of making this delightful dish. If I see it crop up on some menus, I’ll be expecting a pay check.
You don’t need to have this for the first meal, it’s great as the final meal of the day too.
I made this two different ways & took pix. A) is add everything to the pan. B) is remove the sausage before the `shrooms, start eggs, top with ingredients. There isn’t a wrong way really, just what ever you have going on.
2-4 breakfast sausage patties
12 black olives diced
3-6 button mushrooms
7 chicken eggs (XL or Jumbo)
S$P to taste
1 tsp garlic minced
1-3 oz shredded cheese cheddar, Munster, Swiss, Havarti.
Put your sausage patties in the pan & let it cook. With this recipe, ost of that grease, will cook the other ingredients. Break up the sausage into little bites as it cooks.
Cut your veggies. It depends on how chunky you like your food; is how small you want to cut them. I usually go with a 60/40 cut of diced & chopped.
With the sausage about halfway to being done, add the sweet bell pepper & sprinkle with S$P. About half way into that, add the onion S$P that too.
If you want mushrooms, add that & remove the sausage so it doesn’t burn.
If you aren’t adding mushrooms, add the tomatoes. Let them dry up a little.
Drain the oil of this into a large pan. You can use a colander or strainer so to keep the oil neat.
Add a little more oil or some butter. Let it get hot over a medium high burner.
Add the eggs, break yolks. S$P.
Put the drained ingredients over the eggs, & mix & stir as you would scrambled eggs. Use your spatula & keep mixing.
Add the black olives about half to 3/4 of the way.
NOW, add the herbs & spices. Finish cooking the eggs. Plate & serve.
The secret here is to add the rest of the seasonings at the end. Yes, you can sprinkle some cheese over the top if you’d like.
Add or remove ingredients as you like. This is great for those who don’t want any meat, or who want other meats. Ham, salami, pepperoni, deer are good ingredients here. I’d certainly lean towards more mushrooms if using game. You know, you can bring dehydrated veggies, herbs & spices along. A survival hero of mine does that. This works very well with dried eggs. MRE & K-rats never tasted so good. Don’t use rosemary unless you want to hide the pine needles ;}).
Capicola or Italian hot ham is a delight in this scrambled egg dish.
Adding the mushrooms & tomatoes to the hot pan will reduce the “runny” liquid associated with those foods. Lightly cooking the black olives really does add a little extra to them. Try it some time.
I put the dollar sign, not the ampersand betwixt the S and the P on purpose. I wonder how many times a recipe of mine is being copied & pasted elsewhere?
